摘要
菠萝茎是菠萝采收后留下的副产物,产量大,每公顷产量达37.5至45吨,除少量用于提取菠萝蛋白酶外,大部分未得到利用。为了加强菠萝茎的综合利用,本研究分析了菠萝茎的主要营养成分。结果表明,菠萝茎干物质中蛋白质、粗脂肪、总糖、灰分的含量分别为:4.55%、1.56%、80.33%、4.22%,菠萝茎中钾的含量较高,为176.66mg/100g;钙、镁和磷分别达到40.68、15.18、3.96mg/100g;锰、锌、硒等必需微量元素也较丰富。这些结果表明,菠萝茎用于生产菠萝蛋白酶后,其渣可用于提取淀粉和制作功能性食品,如膳食纤维。
Pineapple peduncle is a by-product after harvest of pineapple with high production yield up to 37.5 to 45 ton/ha, which was considered as useless except for preparation of bromelin. In order to get full use of pineapple peduncle, its nutrients was analyzed in this paper. The results showed that the contents of crude protein, crude fat, total sugar and ash in pineapple peduncle on the basis of dry matter were 4.55%, 1.56%, 80.33% and 4.22%, respectively. It also contains 176.66 of K, 40.68 of Ca, 15.18 of Mg, and3.96 mg/100g of P and abundant essential micro elements, such as Mn, Zn, Se, etc. This research indicated that pineapple peduncle could be used to produce starch and functional food, such as dietary fiber.
