玫瑰花蕾辐照杀菌工艺研究

摘要 研究了^(60)Co-γ射线辐照玫瑰花蕾的杀菌效果以及对其成分的影响。结果表明,辐照可有效地杀灭玫瑰花蕾中的菌落总数、霉菌和大肠菌群,随着辐照剂量的增加玫瑰花蕾中的含菌量呈同步下降。菌落总数和霉菌的D10值分别地为2.63kGy、3.61kGy。经7.4kGy辐照处理的玫瑰花蕾,其成分(蛋白质、可溶性总糖、游离总氨基酸、玫瑰色素)无显著影响,单宁含量下降9.3%。经辐照杀菌后的玫瑰花蕾具有较好的耐贮藏性,可有效地提高保质期。 Sterilization of rose buds by ^60Coγ-ray and effect on its components were studied. Results showed that irradiation was very effective in killing microorganisms in rose buds. The population of microorganisms, such as aerobic bacterial count, moulds and coliform bacteria, decreased with increase of irradiation dose. The D10 values for aerobic bacterial count and moulds were 2.63 kGy and 3.61 kGy,respectively. Rose buds,irradiated with 7.4 kGy,did not obvious effect in chemical components ,including protein,total polysaccharide,free amino acid ,pigment of rose, while tannin reduced by 9. 3%. It may be concluded that the treatment of irradiation sterilization can increase rose buds quality guarantee period much longer.
