摘要 低温微生物脂肪酶具有高效、耐热、作用周期短等优势,其独特的低温适应机制是中高温脂肪酶无法替代的。对低温微生物脂肪酶的研究领域,包括筛选的影响因素、结构特征和化学修饰、诱变和提取分离方法、固定化,以及研究现状进行了论述,以期为广大科研工作者提供参考。 Low-temperature lipase from microorganism has the advantage of high efficiency, heat resistant and short cycle, its special low-temperature adaptable mechanism can not be substituted by the medium-temperature and high-temperature lipase. The investigation field,including the effect factor of screening, structure character, chemical modification,induction, the method of isolation and separation, immobi-lization and the research status of low-temperature lipase from microorganim were introduced, so as to provide a reference to the scientific researcher.
