摘要
李氏杆菌污染是即食肉制品的主要安全问题,巴氏杀菌、辐照和紫外线、食品防腐剂、高压处理和栅栏技术都是消除李氏杆菌污染的有效方法,本文对这些方法的研究进展进行了综述。
L. monocytogenes pollution is a significant problem to the safety of ready-to-eat meat products. Pasteurism, irradiation and ultraviolet radiation, food preservatives, high- pressure processing and hurdle technology are useful methods on the sterilization of L. monocytogenes pollution to ready-to-eat meat, the development of these methods were discussed in this article.
