摘要
分别从竹笋罐藏、腌渍、干制以及调味笋、笋汁饮料生产技术等方面综述了竹笋加工技术的研究现状,并且阐述了今后竹笋加工利用的新动向。
This paper reviews the present situations of bamboo shoots' processing technology, which come down to can, curing and pickling, dryness, seasoned and technique of vegetable juice and so on. And its prospects of application are also introduced in detail.
