浅谈油脂代替品

摘要 先进发达的国家,尤其是西方发达国家,其国民膳食的脂肪含量往往过高,对人体的健康造成许多不良影响,所以降低食品的脂肪含量是当务之急。油脂代替品的开发,为这些国家的食品加工业带来了解决的办法。 For two decades now, a low fat diet has been promoted by doctors in many developed countries and this has promoted the development of fat replacers. Traditional fats have found new uses as fat replacers and olestra is one example. Here we focus on the functionality and nutritionality of common fat replacers and olestra in food formulation.
