摘要
我国肉类加工工业有着悠久的历史,现已成为我国食品工业的重要支柱产业。自改革开放以来,我国肉类产量持续增长,1990年达到2,857万吨,攀上世界之冠,发展速度是惊人的。但目前我国肉类工业也面临一些问题,产品结构必须作出适当的调整,企业应加强科技投入,开发更多新产品,以提高市场竞争力。今期肉类专辑扼要地概括了当今肉类加工工业的发展,并就多种新型配料、加工技艺进行探讨和介绍,以期作为肉类工业企业的参考。
Since 1979, Chinese meat production has been increasing steadily. In 1990, total meat production capacity reached 28.57 million tonnes and became the world's biggest meat producer. In 1996, it reached 58 million tonnes. This feature highlights several suggestions for technological improvements and management tips for enterprises. The latest innovation in ingredient manufacturing, processing and new regulations on food safety will also be discussed.
