庆阳市产几种野生蔬菜营养成分分析 被引量:2

A Study on Nutrition Content of Several Wild Vegetables in Qingyang City

摘要 采用2,6-二氯酚靛酚滴定法、蒽酮比色法、微量凯氏定氮法分别对庆阳市产的荠菜、蒲公英、紫花苜蓿、香椿、地木耳五种野生蔬菜的维生素C、总糖、粗蛋白含量做了定量测定.结果表明:地木耳、香椿、紫花苜蓿、荠菜的Vc含量均高于一般栽培蔬菜;地木耳、香椿总糖含量较高;香椿、荠菜、蒲公英、地木耳的粗蛋白含量平均高出一般栽培蔬菜的2~3倍.这些野生蔬菜营养价值高,并有一定的医疗保健作用,具有良好的开发利用前景. Determination of the content of vitamin C, total sugar and protein of five species of wild vegetables, i.e. Capsella bursa- pastoris, Taraxacurn mongolicum, Medicago satire, Toona sinensis, and Commune Vauch found in Qingyang City is done separately by dichlolophen lindophenol, Anthrone-colorimetry, and Micro-KjeldahI methods. The experiment shows that Vicamin C is higher in Commune Vauch, Toona sinensis, Medicago satire and Capsella bursa-pastoris than generic plants vegetables; the total of sugar in Commune Vauch and Toona sinensis is higher; the content of protein in Toona sinensis, Medicago sative, Taraxaeum mongolicum and Commune vauch is just about two to three times higher than the content of standard protein in generic plants vegetables. The nutrition ingredient species of wild vegetables have good medical and health care values, which imply good commercial prospects.
