摘要 目的探索卫生监督部门如何通过监管使农村学校食堂整体卫生质量得到逐步提升。方法立足农村学校食堂条件相对落后的现实,根据农村学校食品卫生问题编写教材,集中培训和个别示范相结合,指导学校按轻重缓急对食堂进行投入,明细经营许可范围,抓好加工操作过程中的关键控制点,监督与服务相结合。结果农村学校食堂的整体卫生质量得到逐步提升,生产经营过程更加符合卫生要求,而且有效预防了食物中毒事故的发生。结论这些做法值得条件相对落后的农村学校食堂借鉴和参考。 Objective To explore a method for hygienic quality improvement of rural school canteens by supervision of hygienic supervision and administration departments. Method Under the reality of relative backwards of rural school canteens, teaching materials were compiled according to food hygienic problems in rural schools. On the combination of centralized training and individual demonstration, the schools were guided to invest in canteens. Business licensing scope was defined. Meanwhile, the critical control points during machining operation should be grasped on the combination of supervision and service. Results The whole hygienic quality of rural school canteens were improved. Production and management process were more suitable for the hygienic requirements, so they could effectively prevent the occurrence of food poisoning accidents. Conclusion It could be a useful reference to the relative backwards of rural school canteens.
