摘要
通过正交实验确定了水溶性膳食纤维的最佳提取工艺为:温度95℃,pH=7.0,时间10min,提取液用量80mL/g,此条件下产率为10.80%。正交实验确定了化学法提取玉米须水不溶性膳食纤维的最佳工艺条件是:浸泡温度30℃,浸泡时间0.5h,NaOH的质量分数是0.1%,料液比1:120,此条件得到的水不溶性膳食纤维的提取率为83.98%。同时分别采用化学法、酶法、酶与化学结合法从玉米须中提取水不溶性膳食纤维,并且对3种方法所得到的水不溶性膳食纤维产品进行了分析比较。化学法所得到的产品生理活性最好,膨胀力和持水力分别为15.4mL/g和615.27%。
The optimum condition of extracting soluble dietary fiber was obtained by the orthogonal rest:temperature 95℃,pH=7.0,extracting dosage 80mL/g,extracting time 10min.With this condition the yield was 10.80%.And the optimum condition of extracting insoluble dietary fiber by chemical was obtained by orthogonal rest too:temperature 30℃.time 0.5h,conentration of NaOH was 0.1%,ratio of solid to liquid was 1:120.In this condition the yield was 83.98%.The insoluble dietary fiber by three methods (chemical,enzymatic and enzymatic-chemical)was analysed.The insoluble dietary fiber by chemical was the bast,its expansion power were 15.4mL/g and water-holding power 615.27% respectively.
