摘要
以桑椹籽粕为原料,采用酶碱法,通过单因素试验、正交试验和方差分析研究了制备桑椹籽粕中膳食纤维的最佳操作参数。结果表明,桑椹籽粕中膳食纤维的最佳制备工艺参数为:NaOH浓度为5%、木瓜蛋白酶用量为0.5%、碱提温度45℃、碱提时间30min。
Taking mulberry seed's dregs as the raw material, the single factor tests, orthogonal experimental designs and variance analyses were applied to optimize manipulation parameters of extraction technology of the dietary fiber from mulberry seed's dregs by enzyme and alkaline process. The results showed that the optimum manipulation parameters were as follows: 30 min extraction in 45℃ 5% NaOH, papain dosage 0. 5% .
