通过对冷却肉加工技术多个专项课题的集成研究,开发出优质兔肉和禽肉加工及贮运成套技术,包括原料选择、屠宰、冷却、包装、运输及贮藏、销售控制、产品标准等.
By summarizing researched results, this paper integrates the processing, storing and transproting technologies of quality chilled poultry and rabbit meat, and involves choice and slaughter of animals, cooling, package, preservation and transport of meat, sales controlling and products standards.
