斑点叉尾鮰鱼皮明胶的制备 被引量:10

摘要 目的:以斑点叉尾鮰鱼皮为原料,采用酸碱法制备鱼皮明胶;方法:选用NaOH溶液和H2SO4溶液进行明胶的提取,通过单因素试验和正交试验,确定斑点叉尾鮰鱼皮明胶最佳制备工艺;结果:NaOH质量分数为0.3%,H2SO4质量分数为0.4%,处理时间均为120min,提取温度45℃,提取时间6h,此时,所得明胶的凝胶强度和黏度分别为672.2g和9.46mPa.s,明胶提取率为65.21%。 Objective:The gelatin was prepared from Channel Catfish skin using acid-alkali method. Method: The optimum parameters for gelatin production of Channel Catfish skin using sodium hydroxide and sulfuric acid were established by the single factor and orthogonal test. Conclusion:The optimal processing conditions were as follows: sodium hydroxide 0.3% (W/V), sulfuric acid 0.4% (W/V), treatment time 120 min, extracting temperature 45 ℃ and time 6 h. Under these conditions,the obtaining gelatin were 672.2 g gel strength, 9.46 mPa. s viscosity and 65. 21% yield respectively.
