摘要
以斑点叉尾鮰鱼皮为原料,通过单因素实验考察硫酸浓度、浸酸料液比、浸酸时间对明胶提取率和凝胶强度的影响。在此基础上,采用Box-Behnken实验设计和响应面分析,对鮰鱼皮明胶提取酸过程中的浸酸工艺条件进行优化。经优化得到的鮰鱼皮明胶浸酸工艺条件为H2SO4浓度为0.4%、浸酸料液比(w/v)为1:14.6、浸酸时间为10.9h、在此条件下明胶的提取率为50.2%,凝胶强度为627.6g。验证实验在硫酸浓度0.4%、浸酸料液比(w/v)1:15、浸酸时间11h条件下,鮰鱼皮明胶提取率为50.1%,凝胶强度为630g。
The gelatin was extracted from Channel catfish skin. The effects of concentration of sulfuric acid, pickling liquid ratio, and pickling time on gelatin yield rate and gel strength were investigated by single factor experiments. On this basis, the Box-Behnken experimental design and response surface analysis were used to optimize the acid pickling process conditions in the channel catfish skin gelatin extraction. The results showed that the optimal acid steeping conditions of channel catfish skin gelatin extraction were concentration of sulfuric acid 0.4%, pickling solid to liquid ratio (w/v) 1:14.6, and pickling time 10.9 h. Under this condition, the gelatin yield from Channel catfish skin was 50.2% and gel strength was 627.6 g. The verification experiment was done under the condition of the sulfuric acid concentration of 0.4%, pickling solid to liquid ratio (w/v) 1:15, and pickling time 11 h. The yield and gel strength of gelatin was 50.1% and 630.0 g, respectively.
