摘要
目的分析与评价牛蒡的营养成分。方法利用仪器与化学分析方法分析测定牛蒡的蛋白质、脂肪、膳食纤维、氨基酸、矿质元素、维生素等营养成分,并与藕、山药的营养成分进行比较。结果牛蒡蛋白质、膳食纤维、精氨酸、天冬氨酸、Mg、Fe、Zn、Cu等元素及维生素C、B6等含量较高。结论牛蒡是一种较好的天然保健食品资源,值得进一步开发利用。
Objective To analyze and evaluate the nutritional ingredients of great burdock. Methods The nutritional ingredients (such as protein, fat, diet fiber, amino acid, mineral element, vitamin, etc.) of great burdock were analyzed and determined with instrumental and chemical analysis methods. They were also compared with the nutritional ingredients of lotus root and Chinese yam. Results Great burdock contained rich nutrients-protein, diet fiber, arginine acid, aspartic acid, Mg, Fe, Zn, Cu, vitamin C, B6. Conclusion Great burdock is a good health food resource and worthy of development and utilization.
