摘要
分析了保鲜膜的二氧化碳/氧气透气比、包装袋内二氧化碳和氧气的平衡过程、果蔬呼吸强度的变化等3个主要因素对果蔬自发气调保鲜效果的影响。分析结果得知,保鲜膜的二氧化碳/氧气透气比的变化及果蔬呼吸强度的变化使包装袋内二氧化碳和氧气的平衡浓度偏离果蔬最佳气体浓度要求,包装袋内二氧化碳和氧气在达到平衡前的时间内其浓度也未达到果蔬最佳气体浓度要求,从而影响果蔬自发气调保鲜效果。
Three factors, CO2/O2 permeation ratio of the membrane, dynamic process of CO2 and O2 concentration in package and the change of respiration degree of wrapped products,which influence the effect of modified atmosphere storage, are discussed. Changes of CO2/O2 permeation ratio of the membrane and respiration degree of wrapped products make the concentration of both CO2 and O2 to unfit the optimum value, concentration of both CO2 and O2 do not reach the optimum value before dynamic balance.
