摘要
应用中性蛋白酶对豆粕进行水解,酶用量为166蛋白酶8000u/g原料、1398蛋白酶9000u/g原料,料水比为1:10,保温水解64-72h,蛋白质消化率可达70%以上,氮溶指数可达85%以上,水解过程中适当添加纤维素酶和α-淀粉酶,对提高蛋白质消化率有利。
Using the neutral protase to hydrolysis the powder of soya bean cake,the protein digestive rate can reach above 70% and the dissolving nitrogen index can be above 85% as the 166 protase activily 8000 u/g material or the 1398 protase 9000 u/g material ,the proportion between material and aqua 1:10,Keeping the optimum temperature of the enzyme and the hydrolytic time 64 ̄72h. It's useful for improving protain digestive rate to add cellulase and α amylase properly during the hydrolysis prcess.
