摘要
综述了利用激光、静电、超声波、红外线、纳米工艺等物理方法对白酒、葡萄酒以及黄酒进行人工催陈的研究和应用现状,并对这几种物理方法的催陈作用进行了对比分析,同时对物理方法用于酿酒生产的前景进行了展望。
The research and current application of accelerated ageing of liquor, wine and rice wine with several physical methods was summarized and compared in this paper, such as laser, static electricity, ultrasonic, infrared and nano-technic. Besides, the future application of above methods in alcoholic drink production was prospected.
