摘要
试验采用Sigma公司的低温"-淀粉酶(A-3176,Type VⅠ-B)对板栗淀粉进行水解,以水解产生的还原糖含量作为液化指标,通过单因素试验和正交试验优化,最终确定了板栗淀粉液化的最佳工艺条件是酶用量99U/g淀粉、酶解温度40℃、体系pH值6.17、酶解时间115min,这种条件下可以使还原糖含量达到28.41%。
Abstract: The α-amylase(A-3176, Type Ⅴ Ⅰ -B, Sigma) was investigated to hydrolyse the chestnut starch in solution. Based on the yields of the dextrose, one hydrolysate of the reaction, the liquefaction condition was optimumed by mono-factor and orthogonal experiments. The results showed that the optimum reaction condition parameters of the liquefaction had been 99U α-amylase/g starch at 40℃ and pH 6.17 for 115 min. Under this condition, the yield of dextrose could be 28.41%.
