摘要
文章对不同水分的年糕片,通过高温季节短期储存、常温下长期储存和实验室模拟储存多次试验研究,认为水分≤16.0%的年糕片可以安全储存,保质期定为6个月是可行的。
The pieces of New Year cake at different moisture contents were stored in high temperature for short period,in normal atmospheric temperature for a long term and in lab. The results showed that the pieces of the cake at moisture content≤16.0% could be stored safely for 6 months.
