摘要
目的了解养老院在营养和膳食方面存在的问题及其影响因素,为实施干预提供数据和方法支持。方法采用分层抽样的方法,对长宁区4所养老院的部分自理老人和工作人员进行面对面问卷调查。结果自理老人的营养知识知晓率为21.05%,知晓率的高低与年龄、文化程度有关;工作人员总体营养知识知晓率为65.51%;不同养老院自理老人、工作人员营养知识知晓率均有统计学差异(P<0.01)。以膳食宝塔为标准进行衡量,自理老人与工作人员饮食情况总体趋于合理,但牛奶摄入不够。结论老人营养知识知晓率较低,老人和工作人员的饮食结构不够合理;应开展对工作人员和老年人营养相关知识的健康教育,加强对养老院合理膳食指导。
Objective To know about the problems and the relative influencing factors of nutrition and diet in nursing homes, and to provide the data and methods for further intervention. Methods Four nursing homes in Changning District were selected by stratified sampling, of which some self-care elders and staffs were investigated face-to-face with questionnaires. Results The awareness rate of self-care elders' nutrition knowledge was 21.05 % with a close relation to their age and education; the awareness rate of nutrition knowledge was 65.51% in staffs; there were an obviously statistic significance differences in the rate of nutrition knowledge of self-care elders and staffs in different nursing homes (P〈0.01). Except for enough milk taken, the self-care elders and staffs had a proper diet on the whole. Conclusion The self-care elders had a low awareness rate of nutrition knowledge. The diet structure was not rational. Health education on nutrition knowledge and proper diet were needed.
