摘要
在新鲜血液中添加一定比例的玉米粉、麸皮等混合物为发酵原料,利用多菌株(蜡状芽孢杆菌、米曲霉、啤酒酵母、乳酸菌),采用多菌种二次发酵法发酵而成的微生态多菌株发酵血液产品,含氨基酸为100 mg/100 g,含可溶性蛋白质达20%以上,产品为浅红色,醇香浓郁,具有发酵血液特殊的芳香,无异味。
Fresh pig blood mixed with a certain proportion of corn flour and bran as raw materials was fermented with multiple strains (like ceraceous bacillus, aspergillus oryzae, beer yeast and lactobacillus) to produce a microbial multi-strain fermented blood product by multi-strain refermantation process. The product contained 100mg/100g amino acid and over 20% soluble protein. It was light red, intensely pure and aromatic, and had a special fragrance of fermented blood and no any foreign smell.
