摘要
冷冻干燥乳酸菌发酵剂的使用简化了乳品企业的生产工艺,提高了企业产品质量,避免了因微生物技术力量不足而造成的菌种质量不佳等问题,综述了国内外直投式酸奶发酵剂的研究现状.
<Abstrcat> Using of the freeze-drying lactobacillus starter can simplify the productive techniques in the dairy industry, improve the quality of the output, avoid the bad starter due to lack of microbial technology. The present domestic and overseas situation of freeze-drying lactobacillus starter was expatiated.
