摘要
P.3644店铺徕客叫卖词从商品供给侧彰显了中古时期敦煌地区所用调料的细节。结合S.6208"干味部"等所载调料,就得到了敦煌地区日常饮食生活较为完整的厨中调料清单。这些调料或用于调味、或用于提色、或用于增香、或用于浆粥饮,进而复原出敦煌地区调理饮食色、香、味的基本面貌,进而反映出唐五代日常饮食生活中的一些基本理念:一是通过调料的使用,追求食物的"色、香、味、形",以提高饮食生活的舒适度;二是在调料的选择上,调料多具有"长年""养颜"的作用,寄托着古人通过饮食"长寿"的理想;三是调料的合理使用,可以给食物杀虫、去毒,保持身体的康健。
The shouts of street vendors indicated the details of seasoning consumed by the people of Dunhuang during the middle ancient period in Chinese history.Through the recording of Dried Flavorings Chapter,we can have a relatively complete and detailed list of condiments used in Dunhuang people’s daily diet.These condiments are used to give food a particular taste,make it more colorful and improve fragarance.The usage reveals general principles of Tang Dynasty about food and drink,which are as the following:1.Make eating more enjoyable by paying attention to color,fragrance,taste and shape of the food.2.Dream about health and longivity by choosing those flavorings that are able to help extend life span and beautify consumers’contenance.3.Reasonable use of flavorings helps sterilize and disinfect food,so as to make it healthier.
