摘要
通过顶空固相微萃取法(SPME)结合二维气相色谱-质谱联用对以汾酒、红星二锅头酒、杏花村世家酒为代表的清香型白酒进行定性、定量分析,使用内标法,通过峰面积等数据,定量分析各白酒香气成分。结果表明,汾酒测出香气成分255种,红星二锅头酒测出香气成分250种,杏花村世家酒测出香气成分218种。通过分析、总结,清香型白酒中含量最多且香气贡献最大的是酯类化合物,其次是醇类、酮类、酸类、醛类、内酯类、含氮化合物、含硫化合物和乙缩醛类化合物。
Qualitative and quantitative analysis of light aroma type Chinese liquor represented by Fenjiu, Hongxing Erguotou liquor and Xinghuacun Shijiajiu by headspace solid phase microextraction(SPME) combined with two-dimensional gas chromatography-mass spectrometry was conducted. Internal standard method, the peak area and other data were used to calculate the quantitative analysis of the aroma components of the liquor. The result showed that there were 255 kinds of aroma components in the light aroma type Chinese liquor, 250 kinds of aroma components in the Red Star Erguotou wine, and 218 kinds of aroma components in the Xinghuacun Shijia wine. Through analysis, the highest content of aroma-type liquor and the largest contribution of aroma were ester compounds, followed by alcohols, ketones, acids, aldehydes, lactones, nitrogencontaining compounds, sulfur-containing compounds and acetal compounds.
