摘要
总结分析了当前中国十大香型白酒的产生、工艺特点、香味成分特征及风味个性;阐述了各香型白酒之间的相互关系;提出了各香型白酒的发展、白酒香型之间的融合与创新的思考。
The formation, technical characteristics, flavoring compositions properties, and individual styles of the ten liquor flavor types in China were reviewed in this paper. The correlations among all the liquor flavor types were illustrated.Besides, the development of each liquor flavor type, the permeation, ~md the innovation among all the liquor flavor types were also discussed.(Tran, by YUE Yang)
