摘要
汾酒口味淡雅、绵甜,没有过多、过重的异味,可以作为药酒或者功能性白酒的基酒,所以随着时间的不断推移,汾酒获得了更大的发展空间。本文概述了汾酒的特点,提出了汾酒香气物质研究分析的技术方法,探究了汾酒特色香气物质的构成,为汾酒的长远发展提供助力。
Fenjiu is elegant and sweet,and has no excessive and excessive odor.It can be used as the base liquor of medicinal liquor or functional Baijiu.So with the passage of time,Fenjiu has gained more room for development.This paper summarizes the characteristics of Fenjiu,and puts forward the long-term analysis method of Fenjiu aroma substances and aroma technology.
