摘要
应用壳聚糖澄清龙眼果汁四因素五水平正交回归试验的研究表明,壳聚糖使用量0.456g/L、温 度在48℃、pH为3.2、澄清时间为3.20h,用此澄清工艺条件澄清的龙眼果汁,透光度可达99%以上,且 营养成分损失不大。
The four factors and five levels of longan juice by clarification using chitosan was studied with orthogonal regression. The results showed that the dosage of chitosan was 0.456g/ L, at 48℃ pH3.2, 3.2h, the transmitents of clarifded longan juice was over 99% and nutrients have not been destroyed
