摘要
对应用气相色谱测定大曲酯化力的方法进行了研究。采用含1%己酸的20%乙醇溶液,加入5g绝干大曲粉,于30～32℃恒温培养100h,再用气相色谱定量出生成的酯量。(陶然)
Th e determination of the esterifying capability of Daqu by gas chromatography was studied.The procedures were as follows:solution containing1%caproic acid and 20%alcohol,then5g absolutely dry Daqu powder added in the solution,then1 00h culture under constant temperature of30～32℃,the quantity of produce d esters determined by gas chromatography at last.(Tran.by YUE Yang)
