This paper reviewed the principle, manipulation, advantage, disadvantage and application of the detection techniques of total bacterial in milk and dairy products, including conventional methods, such as standard plate count and direct microscopic count, and their improvements,as well as membrane filtration, dye reduction tests, flow cytometry, conductivity analysis and ATP bioluminescence technique and so on.
