碱性蛋白酶水解脱铬革屑制备胶原水解物的研究 被引量:8

摘要 研究了用碱性蛋白酶水解脱铬革屑制备胶原水解产物时 ,影响胶原水解产物收获率的各种因素。最佳水解条件为 :酶用量 0 1 6% (v/w) ,反应 pH值 9 5 ,反应温度 65℃ ,反应时间 40min ,水—渣比为 5∶1。在此条件下 ,胶原水解产物的收获率为 66 2 % ,铬含量仅为 4 2 0mg/kg,并对胶原水解产物的理化性质进行了测定。 Alkalic protease was used to hydrolyse dechromed shavings,and the factors effecting collagen hydrolysate harvest, such as the amount of alkalic protease, temperature, pH and time of hydrolyse reaction, were studied. The optimal hydrolyzing conditions were: alkalic protease 0.16%(v/w),pH 9.5,65℃,40min, ratio of water to dechromed shavings was 5∶1.Under such conditions ,the highest yield of collagen hydrolysate was 66.2%,chromium content of the product was only 4.20mg/kg. Furthermore, the physical and chemical properties of collagen hydrolysate were also detected.
