摘要
生物技术尤其是酶解和微生物发酵技术在烟草中的应用研究,已成为当前科技工作者关注的热点。其研究内容包括利用某些有益的优势增香菌种对烟叶进行发酵,以增加烟叶香气,缩短发酵时间;用蛋白酶、纤维素酶、淀粉酶等处理低等级烟叶、烟丝或烟梗,以降解叶中的蛋白质、纤维素、淀粉等生物大分子,减少烟叶燃烧是产生的蛋白臭气和辛辣刺激性,提高低次烟的工业可用性等。文章对目前国内外有关微生物和酶在烟草发酵中应用的研究进展作一简要综述。
The application study of Biotechnology in tobacco, especially enzyme degradation and microbe fermentation, has become a heat point of present scientists concerned. The researches include tobacco leaf fermentation by utilizing some useful and preponderant bacteria which can increase aroma of cigarettses and decrease ferment time, low graded tobacco leaf, pipe or block treatment by applying proteinase, cellulase and amylase and so on, which can decrease stimulating dour from burning protein and improve industy usability. The article simply summarizes progress on application research of microbe and enzyme in tobacco fermentation.
