摘要
本文对食品超高压处理技术的发展、原理和特点作了综述,同时也对食品超高压处理技术的应用及其发展限制因素进行了探讨。
The development and characteristics of ultra high pressure processing technology was introduced in this paper. The ultra high pressure processing technology was substantially applied to food processing industry. The present problems and measures of the ultra high pressure processing technology were also discussed.
