A Study on Granule Properties of Cyclobalanopsis starch

摘要 采用显微观察、X-射线衍射和碘电位滴定等现代分析方法,对青冈属淀粉的颗粒特性进行了较为全面的实验研究。结果表明:青冈属淀粉的颗粒较小,形状较为规则,具有明显的偏光黑十字,颗粒的结晶结构都属于C型。青冈属淀粉的糊化温度较高,但其溶解度和膨胀率都很小。青冈属淀粉的直链淀粉含量较低,从而支链化程度较高。 The granular properties of CyclobalanopsisT5 starch were investigated experimentally by using the modern analytical techniques such as electron scan, x-ray diffraction, polarizing microscopy and Iodine voltage analyzer etc. The results showed that the granules of Cyclobalanopsis starch had comparatively regular figures and less sizes. For Cyclobalanopsis starch, the obvious Maltese cross was observed by polarizing microscopy, and the x-ray diffraction graphs appeared as C pattern. Cyclobalanopsis starch had higher gelatinization temperature and lower amylose content, but its solubility and swell values were less. 
