摘要
随着高科技技术的发展,生物技术在各行业的应用范围也在扩大。从相关研究可知,肉品是人们日常生活中的基本食物,而肉品的安全问题一直是人们关注的重点问题。从我国生物领域的研究情况来看,乳酸菌是一种安全性非常高的细菌,在正常人的肠道中具有重要的生理调节功能,因而在肉品安全中得到较大应用。所以,乳酸菌在肉品保鲜、发酵肉制品等方面都有占有重要地位,对提高人们的食用安全性有极大的意义。本文对乳酸菌的生物学特性和功能机制进行分析,并就其在肉品安全中的应用进行探讨,以便为人们选择肉品提供参考。
With the development of high-tech technology,the application of biotechnology in various industries is also expanding. According to the related research,meat is the basic food in people's daily life,and the safety of meat products has always been the focus of attention. According to our country in the field of biological research,bacteria lactic acid bacteria is a kind of security is very high,in the normal intestinal has important physiological regulation function,and thus get larger in meat safety applications. Therefore,lactobacillus plays an important role in meat preservation and fermented meat products,which is of great significance to improve people's consumption security. This paper analyzes the biological characteristics and functional mechanism of lactic acid bacteria,and discussed its application in meat safety,in order to provide a reference for people to choose the meat.
