番木瓜原产地为美洲热带地区,如今在我国热带地区如广东、云南、福建等地多有栽培种植。在木瓜茎叶以及果实中提取的木瓜蛋白酶和木瓜凝乳酶已在食品、轻纺、啤酒、饲料、化工等行业得到广泛应用。本文通过介绍木瓜蛋白酶的制备流程,研究了木瓜蛋白酶在食品中的应用,旨在为人们提供充分开发木瓜蛋白酶的新思路,引起人们对天然有机产品的重视。
The origin of papaya is tropical America, it is widely cultivated in tropical areas such as Guangdong, Yunnan and Fujian. Papain and papain extracted from stems, leaves and fruits of papaya have been widely used in food, textile, beer, feed, chemical industry and other industries. This paper introduces the papain preparation process, application of papain in food, to provide a new approach to the full development of papain for people, people to pay more attention to natural organic products.
