摘要
糖代谢是果实色泽、风味形成以及其他营养物质代谢的重要基础,是决定果实品质和商品价值的主要因素。在采后果实品质和成熟衰老调控方面,糖代谢的合理调控尤为重要。本文综述了近年来国内外在采后果实糖代谢调控,包括物理调控、化学调控方面的研究进展,以期为果实品质改善提供一定的理论参考。
Sugar metabolism is the basis for the formation of fruit color and flavor,and the metabolism of other nutrients,which is a major factor determining the quality and commercial value of the fruits.The regulation of sugar metabolism is particularly important for postharvest fruit ripening and quality.This paper reviews the recent progress in understanding the regulation of sugar metabolism with respect to physical control and control in postharvest fruits,which will provide a theoretical reference for the improvement of fruit quality.
