摘要
系统地阐述了二氧化硫 (SO2 )在红葡萄酒生产中抗氧化性的研究状况。通过大量的文献分析认为 ,二氧化硫在红葡萄酒中并不能表现出抗氧化特性。因此 ,寻求新的红葡萄酒抗氧化剂就成为主要的研究方向之一。
The review of research advances of antioxidant properties of sulfur dioxide in red wine makes us consider that the sulfur dioxide could not express effects of an antioxidant in red wine, and so it would be very important to search new types of antioxidants to protect red wines.
