摘要
综述了化学计量学在食品过程分析、类别分析、掺伪分析、感观分析及食品成分和添加剂分析中的应用,并对该领域的研究前景进行了展望。
In this paper,it was reviewed with 36 references that the application of chemometrics,such as multivariate calibration,pattern recognition and artificial neural network,food industry process analysis,food classification,adulteration,food sense analysis and the determination of food components and additives.In addition,the prospect and trends of chemometrics in food analysis were also discussed.
