摘要
针对皮革工业中的修边角料先热法提胶,后酶解处理,获取具有高附加值的胶原蛋白水解产品———多肽物质,重点对国外两种酶制剂的酶解条件和能力进行比较,得出G酶的最适水解条件为:55℃;pH为9;酶用量为2%。B酶的最适条件为:50℃;pH为8;酶用量为4%。对比证明G酶水解条件适应范围广,水解速度快,水解能力强,程度深,水解蛋白分子量在5000Da左右,感观上无味,白色透明。可应用于食品,保健,化妆品等具有高附加值的产品领域。
One twostep process was developed to treate shavings of wet salted hide(SWSH).In the first step ,SWSH was heated in a boiling water bath to extract gelatin and the gelatin was treated in the second step using two kinks of collagenase to produce a lower molecular weight protein hydrolysate - peptide.The suitable hydrolysis conditions of collagenase G are 55 ℃;pH 9;the usage being 2%.The suitable hydrolysis conditions of collagenase B are 50 ℃;pH 8;the usage being 4%.The results showed that collagenase G is better than the collagenase B.The molecular weight of hydrolysate by collagenase G is about 5000 Da.It can be widely applied in the high valueadded fields of foods, health care and cosmetic.
