摘要
茶多酚是茶叶中所含的一类多羟基类化合物,简称TP,包括黄烷醇类、花色苷类、黄酮类、黄酮醇类和酚酸类等。研究发现:茶多酚具有抗氧化、降血脂、降血糖、抗辐射等功能,且对人体无副作用、无毒。本文对茶多酚提取技术及其功能化研究进展进行了综述,主要介绍了目前常用的几种提取技术和功能化研究,为茶多酚的研究和应用提供参考。
Tea Polyphenols is a type of poly-hydroxy compound contained in tea, abbreviated as TP, including flavonols, anthocyanins, flavonoids and phenolic acids et.al. The study found that tea polyphenols have the functions of anti-oxidation, lowering blood lipids, lowering blood sugar, and anti-radiation, and have no side effects and are non-toxic to the human body. In this paper, the progress of tea polyphenols extraction technology and its functional research are reviewed, and some commonly used extraction techniques and functional research are introduced, which provide reference for the research and application of tea polyphenols.
