摘要
辣椒在清代引入贵州后,便作为重要农作物被多部地方志记载。辣椒进入中国沿海地区以后,以湖南为次级中心,经商业、移民等活动进入贵州省东部,在贵州省内于清康乾时期初步扩散,嘉道年间普遍引种到全省各地。辣椒作为副食有“代盐”“下饭”之重要功用,与贵州饮食相结合构建了酸辣、麻辣和以辣制酸等地方特色,极大丰富了贵州饮食文化。清代以来,辣椒的传播与食用深刻影响着贵州发展,除救灾与养活人口之外,还丰富了地方文化内涵,促进了贵州经济发展。今天,辣椒产业在贵州呈现蓬勃发展的良好态势,持续推动着贵州经济文化的发展。
Since its introduction into Guizhou in the Qing Dynasty,chili pepper had been recorded in many local chronicles as an important crop.After entering the coastal areas of China,chili pepper found its way to Hunan Province before moving into the eastern part of Guizhou Province thanks to trade and immigration.Initially spread in Guizhou during Kangxi and Qianlong periods of the Qing Dynasty,chili pepper gained popularity throughout the province during the Jiaqing and Daoguang periods.As a non-staple food,the pepper has the important function of“replacing salt”and“going well with rice”.Combined with Guizhou s diet,it has built up local characteristics such as hot and sour,spicy and numbing,making acid with spicy,which has greatly enriched Guizhou s dietary culture.Since the Qing Dynasty,the diffusion and consumption of chili peppers have profoundly influenced the development of Guizhou,which has enriched the local culture and promoted the economic development of Guizhou,in addition to relieving disaster and feeding the population.Today,the chili pepper industry in Guizhou presents a good trend of vigorous development,and continues to promote the development of Guizhou s economy and culture.
