摘要
本试验旨在研究酉州乌羊和本地白山羊肌肉质构特性及脂肪酸组成的差异。选取相同饲养条件下12月龄酉州乌羊和本地白山羊公羊各3只,屠宰后采集背最长肌样本分别进行肌肉质构、滋味、气味、脂肪酸组成测定。结果表明:1)酉州乌羊肌肉硬度和咀嚼性显著低于本地白山羊(P<0.05),黏附性、内聚性、弹性、胶黏性均无显著差异(P>0.05)。2)酉州乌羊肌肉丰富性响应值极显著高于本地白山羊(P<0.01),鲜味响应值显著高于本地白山羊(P<0.05),涩味响应值显著低于本地白山羊(P<0.05);酉州乌羊肌肉电子鼻W1W传感器响应值显著低于本地白山羊(P<0.05),其他传感器响应值在2组肌肉样品间无显著差异(P>0.05)。3)酉州乌羊肌肉C16∶0含量极显著低于本地白山羊(P<0.01),C18∶0、C18∶3n3和C20∶0含量显著低于本地白山羊(P<0.05),酉州乌羊肌肉C19∶1n9 t含量显著低于本地白山羊(P<0.05),C22∶1n9含量极显著高于本地白山羊(P<0.01),C20∶4n6含量极显著高于本地白山羊(P<0.01),C20∶3n6和C22∶4含量显著高于本地白山羊(P<0.05)。与本地白山羊相比,酉州乌羊肌肉的多不饱和脂肪酸/饱和脂肪酸(PUFA/SFA)和n-6/n-3 PUFA显著升高(P<0.05)。综上所述,与本地白山羊相比,酉州乌羊肌肉质构特性较好,滋味更优,营养价值更高,更加符合人类健康膳食要求。
To study the difference in the muscle texture characteristic and fatty acid composition between Youzhou dark goats and local white goats,each three 12-month-old male Youzhou dark goats and local white goats were selected for slaughter under the same feeding and management conditions.Longissimus dorsi muscle was collected from each group,and muscle texture characteristic,taste,odor and fatty acid composition were determined respectively.The results showed as follows:1)the muscle hardness and chewiness of Youzhou dark goats muscle were significantly lower than local white goats(P<0.05),there was no significant difference in adhesiveness,cohesiveness,springiness and glumminess between Youzhou dark goats and local white goats(P>0.05).2)The muscle richness response value of Youzhou dark goats was significantly higher than that of local white goats(P<0.01),the umami response value of Youzhou dark goats was significantly higher than that of local white goats(P<0.05),the astringency response value of Youzhou dark goats muscle was significantly lower than that of local white goats(P<0.05).The response value of W1W sensor in the electronic nose of Youzhou dark goats was significantly lower than that of local white goats(P<0.05),and there was no significant difference in response value of other sensors between two groups muscle(P>0.05).3)Youzhou dark goats muscle C16∶0 content was significantly lower than local white goats(P<0.01),Youzhou dark goats C18∶0、C18∶3n3 and C20∶0 contents were significantly lower than local white goats(P<0.05),Youzhou dark goats C19∶1n9 t content was significantly lower than local white goats(P<0.05),Youzhou dark goats C22∶1n9 content was significantly higher than local white goats(P<0.01),Youzhou dark goats C20∶4n6 was significantly higher than local white goats(P<0.01),Youzhou dark goats C20∶3n6 and C22∶4 contents were significantly higher than local white goats(P<0.05).Compared with local white goats,the values of polyunsaturated fatty acid/saturated fatty acid(PUFA/SFA)and
