摘要
本文采用柱前衍生-高效液相色谱法同时测定速溶型水解乳清蛋白粉中18种游离氨基酸的含量。结果显示,各氨基酸色谱峰之间分离良好,18种氨基酸回归方程相关系数均在0.998以上,加标回收率在92.6%~107.4%,相对标准偏差小于5.0%。此方法可用于测定市售速溶型水解乳清蛋白含量,且较《食品安全国家标准食品中氨基酸的测定》(GB 5009.124-2016)操作更为简便,可取得良好的测定结果。
The simultaneous determination of 18 kinds of free amino acids in instant hydrolyzed whey protein powder by pre-column derivatization and high performance liquid chromatography was studied.The results showed that the amino acid chromatographic peaks were well separated,the correlation coefficients of 18 amino acid regression equations were all above 0.998,the recoveries were 92.6%~107.4%,and the relative standard deviations were less than 5.0%.This method can be used to determine the content of commercially available instant hydrolyzed whey protein,and the operation is simpler than GB 5009.124-2016,and the determination results are good.
