摘要
谷物中含有丰富的膳食纤维、维生素和矿物质等成分,决定了谷物具有降低胆固醇、提供能量、抗氧化和抗疲劳等功能特性。以谷物为原料经多种不同加工方式制成的植物饮料,以其功能优势受到人们的重视。本文从谷物性植物饮料的类型、营养价值、功能特性及加工工艺等方面进行论述,并对我国谷物性植物饮料的发展进行展望。
Cereals are rich in dietary fiber,vitamins,and minerals,which determine their functional properties such as lowering cholesterol,providing energy,antioxidant,and fatigue resistance.Plant based beverages made from grains through various processing methods have received attention due to their functional advantages.The article discusses the types,nutritional value,functional characteristics,and processing technology of grain based plant-based beverages,and looks forward to the development of grain based plant-based beverages in China.
