摘要
无籽刺梨是一种药食两用的林源特色食用资源,含有独特的风味成分和生物活性物质,如氨基酸、挥发性物质、有机酸、多酚、多糖和萜类化合物等。这些成分赋予了无籽刺梨特有的风味,使其具有清除自由基、降血糖和抗肿瘤等多种生理功能。本文综述了无籽刺梨的风味成分和生物活性物质的研究现状,为无籽刺梨开发利用提供参考。
Rosa sterilis is a unique forest-derived resource with medicinal and food.It contains rich flavor components and bioactive substances,such as amino acids,volatile compounds,flavonoids,polysaccharides and terpenoids.These components give Rosa sterilis its unique flavor and make it have various physiological functions such as scavenging free radicals,hypoglycemia and anti-tumor.This paper reviews the current status of research on the flavor components and bioactive substances of Rosa sterilis to provide reference for the development and utilization of Rosa sterilis.
