摘要
膳食纤维(Dietary fiber,DF)无法被机体吸收利用,也不能被消化酶分解,但对人体健康有着重要作用,可以降血脂、控制血压,还可预防心血管疾病、2型糖尿病、肥胖症、乳腺癌等疾病的发生。针对膳食纤维的相关概念做出分析,阐述果蔬加工副产物膳食纤维改性研究进展。
Dietary fiber(DF)cannot be absorbed and utilized by the human body nor digested by digestive enzymes.It played a crucial role in promoting human health and preventing various diseases.For example,it could lower blood lipids,control blood pressure,and prevent the occurrence of cardiovascular diseases,type 2 diabetes,obesity,breast cancer and other diseases.This paper mainly analyzed the related concepts of DF and expounded the research progress of the modification of dietary fiber,a by-product in the processing of fruits and vegetables.
