摘要
本研究采用香叶醇改性褐藻胶寡糖制备得到褐藻胶寡糖-O-香叶醇(AOS-O-Ger),作为一种新型的抑霉剂应用于大豆储藏过程中。对制备的褐藻胶寡糖-O-香叶醇进行紫外可见吸收光谱、傅里叶变换近红外光谱、核磁氢谱、X-射线衍射图谱表征,结果显示褐藻胶寡糖-O-香叶醇成功制备。探究了褐藻胶寡糖-O-香叶醇的抑菌性,发现对青霉和黄曲霉有明显的抑制作用,且香叶基溴与褐藻胶寡糖摩尔比为3∶1的褐藻胶寡糖-O-香叶醇抑菌性最好。将褐藻胶寡糖-O-香叶醇应用于水质量分数为14%的大豆中,于35℃、80%相对湿度下储藏60 d,发现褐藻胶寡糖-O-香叶醇可以控制大豆真菌菌落总数在6.3×10^(3) CFU/g以下,且减缓了大豆品质的劣变。研究结果表明褐藻胶寡糖-O-香叶醇在大豆储藏过程中能有效抑制霉变,并维持大豆的品质。
In this research,alginate oligosaccharide-O-geraniol(AOS-O-Ger)was prepared by modifying alginate oligosaccharide with geraniol,used as a new mold inhibitor in soybean storage.The prepared AOS-O-Ger was characterized by UV,FT-NIR,1H-NMR and XRD.The results indicated that AOS-O-Ger was successfully prepared.The antibacterial activity of AOS-O-Ger was investigated.It was found that the derivatives had obvious inhibitory effect on Penicillium and Aspergillus flavus,and the AOS-O-Ger 3 with the molar ratio of geranyl bromide to alginate oligosaccharide of 3∶1 had the best antibacterial activity.AOS-O-Ger was applied to soybean with 14%moisture and stored at 35℃and 80%relative humidity for 60 d.It was found that AOS-O-Ger could control the total number of soybean fungal colonies below 6.3×10^(3) CFU/g and slow down the deterioration of soybean quality.The results indicated that AOS-O-Ger could effectively inhibit mildew and maintain the quality of soybean during storage.
