摘要
大豆霉变后,其中营养物质含量减少,籽粒变色变味,某些微生物分泌的毒素还可能使籽粒感染上毒素。用含有霉变豆的大豆进行油脂浸出,会对浸出毛油质量以及油脂精炼效果产生不良影响。本课题用霉变豆含量不同的大豆样品进行浸出,并对所得浸出毛油依次进行水化脱胶和吸附脱色,分别测定不同样品浸出毛油、脱胶油、脱色油的酸价、过氧化值、色泽、磷脂含量等指标,由此分析研究霉变大豆对毛油质量的影响以及不同含量霉变大豆对毛油质量的影响程度。结果显示,霉变大豆对毛油质量、精炼效果都产生不良影响,其影响程度随霉变豆含量的增加而显著。
Mildew of soybean will decrease the nutriment in soybean, damage soybean color and flavor, bring negative influence to the quality of extracted crude oil and to the oil refining; the toxin secreted from some microbe may result even worse. In this research, soybean samples with different mildew kernel content were extracted to produce crude oil; the crude oil was hydrated, de - gummed and absorb - bleached in turn ; finally, the acid value, peroxide value, color, phospholipid content,etc, of the extracted crude oil, of the de - gummed oil, and of the bleached oil were separately measured. The results show that the mildew soybean brings negative influence to the quality of crude oil and to the oil refining effect. The influence degree increases obviously along with the increase of mildew kernel content.
