摘要
目的:了解潍坊市肉与肉制品中单增李斯特菌的污染状况,为食品安全风险评估工作提供基础数据。方法:随机采集潍坊市市售肉与肉制品,进行单增李斯特菌的分离鉴定并采用多重PCR进行血清分群。结果:271份肉及肉制品中共检出单增李斯特菌阳性样本51份,总检出率为18.82%。生肉较熟肉检出率高,差异有统计学意义(χ^(2)=6.581,P <0.05)。不同加工储存方式(鲜肉、冷鲜肉、冷冻肉、调理肉制品和熟肉)中检出率差异无统计学意义(χ^(2)=7.743,P> 0.05)。54株单增李斯特菌以Ⅱa血清群为主(51.85%),其他血清群依次为Ⅳa血清群(27.78%)、Ⅱc血清群(14.81%)和Ⅱb血清群(5.56%),未检出Ⅳb血清群。结论:潍坊市肉及肉制品中存在不同程度的单增李斯特菌污染,其中生肉及其制品致病风险最大,熟肉制品虽污染程度不高,但仍存在健康风险,应引起相关部门的重视。
Objective:To investigate the contamination of Listeria monocytogenes in meat and meat products sold in Weifang,and provide basic data for food safety risk assessment work.Method:The meat and meat products sold were randomly selected in Weifang.The samples were detected for Listeria monocytogenes and serogroup were typed by multiplex PCR.Result:A total of 51 positive samples of Listeria monocytogenes were detected in 271 meat and meat products,with a total detection rate of 18.82%.The detection rate of raw meat was higher than that of cooked meat,and the difference was statistically significant(χ^(2)=6.581,P<0.05).There is no statistically significant difference in detection rates among different processing and storage methods(fresh meat,cold fresh meat,frozen meat,seasoned meat products,and cooked meat)(χ^(2)=7.743,P>0.05).Among the 54 strains of Listeria monocytogenes detected,IIa was the main serogroup(51.85%),followed by IVa(27.78%),IIc(14.81%),IIb(5.56%).IVb were not detected.Conclusion:There are different degrees of Listeria monocytogenes contamination in meat and meat products in Weifang,in which raw meat and its products have the greatest risk of causing disease,and although the degree of contamination of cooked meat products is not high,there are still health risks,relevant departments should pay attention to it.
